Food is important when walking not only from a nutritional point of view, it needs to be light in weight and compact. The food should not deteriorate for a period of 24 hours in the event of an emergency. The packaging should be minimal to stop materials being left on the Mountain.
I am always on the lookout for good recipes I am bored with the usual BLT and other easily knocked up offerings from the local supermarket. If you can think of a great meal which fills the empty tummy and gives pleasure while sitting on the top of a mountain .... Let's have it for publication here.
Don't forget that we have vegetarians in the group and vegetarian food is something I know nothing about so any help you can give would be appreciated.
Some of the following recipes must be made at home the day before the actual walk. However if your walk is to last for several days then cooking on the move is the only real alternative. One lightweight cooking pot for both dining and drinking is the easiest and lightest method. Perhaps I am old fashioned but the old military mess tins, or Dixie cans as they are sometimes called, are lightweight and strong. The little hexamine cooker and fuel fits into them, the two tins close together forming a box making a very compact and easily portable micro kitchen. These tins have very wide bottoms which makes maximum use of the heat from your cooker and work much better than tall cooking pots.
This little cooker is designed to MOD specifications to operate in extreme conditions it is simplicity itself to setup and operate. One tablet from the pack of 8 will boil well over half a litre of water within 10 minutes. The hexamine packs are very cheap and clean in operation. The entire kitchen weighs about a pound in weight and costs less than £10 or $20US it will work in places where nothing else will. Warm food in a cold place can be both a comfort and life saver.
This is a hexamine cooker, small lightweight and very practical and has been used by the Military since the year dot. Available for the price of a cup of coffee £2.99. It comes with 8 hexamine tablets to get you started. Look on the internet for this sort of equipment as it is much more expensive in the hiking and mountain shops. The refill tablets cost £1.50 for a packet of eight and will keep for years if you do not open the packet. There is a shop on the left hand side as you enter Newtownards on the Comber Road. It is called something like "CURIOS" ,,, You know the shop with Osama Bin Laden or Saddam Hussein standing outside, anyway it has everything in stock 'n ready to go. The mess tins, cooker and three packs of hexamine cost me under £20 and it works out the same as you don't have Post and Package to pay on top, if you were buying it over the internet.
One other essential thing to carry is a packet of water and wind proof matches or a good quality lighter with a full tank and a fresh flint. I have said this many times [almost to the point of tautology,] before the most important thing to carry is water for drinking, cooking and for damping your cloth to keep cool, and rubbing sticky and dirty hands. If you are high in the hills and water is flowing straight from melting ice it is probably safe enough to drink. In places further down the hills it is possible that the water could be contaminated regardless of how clean it looks. In an emergency you may need to drink it but at the first sign of trouble go to your Doctor and tell him what you did. Most of the time you will not suffer any ill effects but there is a chance that you will contract Weil's disease which can lead to renal (kidney) and hepatic (liver) failure, which can be potentially fatal. Boiling water will kill most bugs and make it safe for cooking and making tea but don't ingest water which has not been heat treated. Boiling the water and letting it cool before pouring it into your container is a method of topping up your supply in the wild. These modern TV survivalists are often seen drinking filthy water they are taking serious risks and then relying on a course of antibiotics to kill off any bugs they have ingested. Don't copy them unless you are in serious danger of immediately dying of thirst.
As with any fire it is best to ignite it out of the wind. If you can find a deep gully get into it and dig a shallow hole for your cooker or place some rocks round it. This will give it extra stability and ensure that the maximum heat is getting to your cooking pot. This also limits the number of sparks blowing about. Note that modern materials will be damaged if a spark lands on any of your kit, it also helps protect the environment. Place your warm jacket over your shoulders as you will lose body heat doing nothing. And don't forget to sit on your foam seat to insulate yourself from the cold damp ground. The broad brimmed hat helps to keep the sun or rain off and a cape gives you extra protection. This also gives a bit of privacy while you do the cooking. Bacon and sausages when frying gives off a wonderful smell.
Did you know that the smell of bacon frying can travel several hundred yards down wind and makes everyone within range very hungry indeed. Use olive oil to cook with and if necessary to provide light. Simply thread a cotton wick into the bottle and use a pin or hair clip to stop it falling in all the way, then light it. If the bottle is small 50 ml this crude candle will burn all night and there will be sufficient oil for cooking in the morning, without carrying excessive weight.. Start with some sausages as they take longest to cook then add a couple of slices of bacon. When it's nearly finished cooking drop in a couple of eggs to fry, lastly empty your beans on top to warm up. This stops the eggs and bacon from getting burnt and heats up the beans. Ok! I know it looks like a mess, that's why they are called mess tins. Use the smaller tin to boil up some water and make tea while you are eating from the other tin. Do not fill this tin with more water than you need to make a cup or mug of tea, about 15 mm is enough for two cups. The food from these tins tastes great and sustains you for ages, it also upsets the more cultured propensities of the gourmet, but who cares about the opinions of self-righteous twits like that. Of course you could redeem yourself in their eyes by uncorking a bottle of Pétrus or Romanée Conti. When you are hungry enough you will eat almost anything and what's more you will enjoy it out in the fresh air.
Just the basic equipment I have described in this section is all you need and if you think the previous day about your food you can have a menu fit for a king.
Carnation Condensed Milk is now available in squeezy tubes and is great in tea, coffee and porridge. Porridge can be cooked in minutes on the mountains on your little hexamine cooker. Just put a handful of oats into some water and bring to the boil then add the Carnation Milk and a little salt and sugar. This is good substantial, hunger satisfying food to set you up for the day and is lightweight before cooking.
Peanut Butter is another source of energy spread this on your bread and then make it even more creamy by putting carnation milk on top of it.

Let me put things into its proper perspective. In the RAF we complained about Carnation Milk, tinned sausages, tomatoes, beans potatoes and just about anything else the RAF gave us in tins. We also complained about the kit we were given to wear. We also grumbled about having to do route marches and taking exercise. Here we are in 2008 here I am telling you of the usefulness of Carnation Milk, powdered potatoes, dried onions, and a host of things I used to grumble about, how things have changed. We don't get paid to do any of this walking and there is nobody to listen to our grumbles, but we still turn up ready and willing to put ourselves through torture,... 'cos we love it. I must admit that the technology for manufacturing this convenience food has vastly improved along with the flavour and texture. How twisted can that be ?
I never thought that 40 years later I would be telling people how good dried food can be boiled on a bloomin stove in the back end of nowhere could be so good.

Here is a short list of lightweight dried items which can be carried with you. Providing that you keep them dry until you are ready to cook them they can be stored for months even years. All you need to do is add water and cook on your hexamine stove. This list is by no means exhaustive, there are thousands of ingredients out there for you to use. Just pick those you will be carrying on the day. Try them at home and select the ones you know that you like. When preparing to walk choose your items you want and pack in a freezer bag, seal the top with a rubber band, then go...

This is the Crusader Cooking System from BCB International as advertised in Soldier Magazine. This is a relatively new introduction in Military terms and it is not everyones first choice, yet, in time, it will become more popular.. The fuel which is non toxic and can be safely used in places with restricted ventilation, appears to be the problem. If you use the old Hexamine tablets then everything works well but don't breathe the fumes. Soldiers are hard to please and I hope they never will take the new kit without giving it a thorough crtique to get the bugs ironed out before operations in the field.

  The cooker is £6-95, Fuel £4-99. The cup canteen which is stainless steel is priced at £15-95 and the optional lid another £3-50.

  As I already have the old hexamine cooker and all the bits I need it will be some time before I need to buy this new kit.

 

LONG DURATION SUSTENANCE
Aunt Jane's Black Balls.  My aunt Jane she called me in and gave me tay outa 'er wee tin 'af a bap with shuger on tap and three ....
PART 1
1 Cup of Whole grain rolled oats. (Quaker porridge oats is best)
100 Gram Chopped mixed nuts (Buchanan's are best) Grind to flour for smooth suck ability.
3 heaped teaspoons of dried skimmed milk.
3 heaped teaspoons of Horlicks.
3 heaped teaspoons of Cocoa powder (Green and Blacks)
1 pinch salt.   The quantity of salt may be increased slightly during very hot weather.
1 pinch ground mixed spice or spice of choice.
Mix all of the above ingredients in a blender, the longer the blending process the smoother the final product will be.
Sieve to remove any lumps for extra creamy smoothness
PART 2
1 large tablespoon of golden syrup
1 large tablespoon of set honey of choice
2 oz of Dark Brown sugar or Demerara (Sugar of Choice)

METHOD
Do not add water at any stage of this process. Carefully heat Honey, Syrup and Sugar until dissolved, then remove from heat. Add the well blended ingredients listed in Part 1 to the melted ingredients. Mix thoroughly, place back on heat and keep mixing, do not let mixture get too hot it will caramelise. Once the mixture begins to clump together remove from heat but keep mixing. When the mixture looks smooth and has a surface sheen. then begin to roll into bite sized ball shaped portions. Toss into icing sugar on a cold oven tray and allow to cool. When cold the portions should be almost as hard as ball bearings. sprinkle with icing sugar, place in an airtight container. Adequate water should be carried as the oats will absorb water in the stomach. Before giving these to anyone warn them that the mixture contains nuts.

This is a high quality product not comparable to Kendal Mint Cake which is almost entirely made from sugar. You can add mint flavour if you wish but I advise against it as this recipe stands well on its own for flavour from the mixed spice and other ingredients.

Those of you who would rather roll and cut into squares can also coat the product with a cooking chocolate of your choice for added luxury.

This is what the American Army exists on for days on end. It is light in weight and easily carried and the components included in it have not changed for years. Many of the ingredients are the same as Aunt Jane's Black Balls. Dextrose is sold as Dextro tablets available from local chemist's shops at 45p per pack.
K-RATION
Center: US Army field ration K dinner unit
1. Outside box; 2. Inside box; 3. Pasteurized process American cheese; 4. K-1 biscuit; 5. K-2 biscuit; 6. Malted milk - dextrose and dextrose tablets 15; 7. Lemon juice powder (synthetic); 8. Pressed sugar tablets; 9. Four cigarettes; 10. Chewing gum; 11. US Army field ration D: to be eaten slowly (in about half an hour). Can be dissolved by crumbling into a cup of boiling water, if desired as a beverage. Ingredients: chocolate, sugar, skim milk powder, cocoa fat, oat flour, artificial flavoring, C. 45mg, Vitamin B (Thiamin Hydrochloride).

These rations are good for a trip lasting one day or two in an emergency, they are not a substitute for a good hot, substantial meal.

I do not normally advertise but when something is as tried and well tested as Dextro Energy tablets then, why not?
They were once called Dextrasol Tablets but as usual designers needed something to do so they changed the packaging. These are available in the local chemist's shop at 48p per packet. They are clean tasting and refreshing in the mouth and give you that little boost you need towards the end of the walk. It is on the downhill stretch near the car where you need the brain to be most aware and active to avoid accidents. These with Aunt Jane's Black Balls which contains Cocoa should help your concentration.
I do not take these tablets until I begin the return journey. I rely upon a good balanced diet on the way out/up but if I feel that I am beginning to get flagged I take one or two. These tablets are available in a wide variety of flavours, but I stick with the plain ones.

Crunchy Granola
Preheat the oven to 180 /350 /Gas Mark 4.
Put 2oz sesame seeds, 2oz sunflower seeds, 3 ½ oz flaked almonds and 5 oz rolled oats into a roasting tin. Mix 2 tbsp black treacle with 2 tbsp boiling water until dissolved, then pour over the seeds and oats in the roasting tin. Mix to distribute the treacle and make a lumpy mixture.
Spread the mixture out over the tin.
Bake for 15 - 20 minutes, until crunchy, stirring halfway through. It will crisp up further as it cools. Allow to cool in the tin, then mix in 5 oz raisins and store in an airtight container.
Makes 8 small servings.
I have had a sample of this from Ann Latimer, very tasty.

The following may be classed as "over the top" but good food in beautiful scenery is a real pleasure.

Added 6th July 2007
Honey / Lemon Glazed Chicken with Egg Fried Rice.
Another cold meal for you to enjoy on the hot days high up in the Mournes.
INGREDIENTS
Chicken pieces for 1 Person
1 Tablespoon of sugar
1 Heaped teaspoon of Cornflour or Arrowroot.
1 Tablespoon of Honey.
Lemon juice to taste.
Salt free chicken stock.
Warning DO NOT ADD SALT TO THE GLAZED CHICKEN
Cut your chicken breasts into small fork sized pieces.
Mix sugar with cornflour then add lemon juice and stir, finally add the honey and mix to dissolve.
Bring wok or pan up to a good high temperature.
Pour on a small quantity of olive oil and swirl to coat surface.
Toss on the chicken pieces and sear for a few seconds.
Next add salt free chicken stock just enough to stop searing process.
Cook until stock is reduced almost to the point of vanishing.
This operation may need to be repeated several times until chicken is thoroughly cooked through.
Next add the honey and lemon mix and stir thoroughly.
The mix should rapidly become quite stiff so add a little water until you get the desired texture.
Allow to cool.
Next cook your rice (Basmati is my choice) drain and rinse with boiling water.
Drain and toss onto oiled wok or pan at very high temperature.
Mix in two eggs and stir until the egg is cooked.
Add soy sauce and salt to taste sprinkle in some fresh chopped parsley.
Place into a lunch box and allow to cool.
Shape the fried rice neatly to one end and then fill the gap with your glazed chicken.
Insert fork, pop on lid and place in fridge ready for next morning.

MEAT LOAF otherwise known as the Concrete Pasty.#
This is one of the most unusual mountain foods that you will ever come across it is a hybrid between a Cornish Pasty and a block of concrete.
It is tasty and sustaining and is much more robust than the traditional sausage roll.
On the mountain if your jaws are not strong enough to bite through it you may use your ice axe.
The family table version can use more moist ingredients such as fresh chopped onions carrots and a softer coating and you are back to the Cornish pasty. The toffee hammers may be dispensed with but if required should sit on the right between the knife and soup spoon.
Electric drills and chain saws are not considered as suitable tablewear in a good home.

    Tortilla Style fold.
A packet of Mexican Flour Tortillas (tor-tee-yahs) don't use chapattis they are not strong enough nor is any of the usual pastry casings.

Use a large mixing bowl to hold the following dry ingredients.
Dried onions
Bread crumbs
Quaker Oats
Sage and Onion stuffing
Mushroom Garlic and Thyme stuffing.
Salt to taste
Gravy powder
Mustard powder
Curry Powder.
You don't need all of these ingredients just use what you consider tasteful and what you think you will enjoy.
Sage can be a very pungent herb if too much is used. I am after piquancy not fumigation.. mix all of these ingredients first, you don't want hot spots in the product. Use as much low fat minced steak as you want. The oats and bread crumbs are to absorb the juice and fat from the cooking of the meat and spread the herb flavours evenly throughout the mixture.
Mix the dry ingredients together and then add the meat mix until the entire thing starts to cling together into a ball. If it flakes and falls apart then add 1 teaspoon of water and keep mixing add the water slowly we don't want it over moist for the mountains.

Allow the ingredients time to mature while you open the packet of tortillas cut some aluminium cooking foil squares big enough to wrap the finished product. Use olive oil to coat the aluminium foil on one side. Dampen each tortilla with a pastry brush so that when it is folded the edges bond together.
Take just enough of your mix and form it into a shape to allow the tortilla to be folded over it into a double ended burrito style. Dampen the surfaces with a little water so that the edges will bond during the cooking. Wrap the tortilla with the olive oil side in and fold in such a way that nothing is exposed and crumple the edges of the foil so that the tortilla does not unfold.
    Burrito style fold. Place on a wire grill in a pre heated oven at 180 degrees and then turn the temperature down to 160 and cook for 20 minutes. Turn the wire grill frequently so that all surfaces are evenly heated and the tortillas are cooked through. If you squeeze the tortillas during cooking they will feel soft this is because of the moisture within the ingredients. After 20 minutes remove the cooking foil replace in oven, turn the heat back up to 180 for five minutes or until the tortillas are golden brown and remove from the oven. They should be hard skinned and the inside just moist enough to enjoy. For mountain use remove the foil then place each one in a freezer bag and freeze until you are ready to go walking. The remainder can be eaten immediately with mashed potatoes, chips and baked beans.
It's simple, It's cheap and lies in your gut for a week.

MAN THE OPPORTUNIST
Humans are opportunists when it comes to food.
In the past we were largely hunter gatherers who lived off the land. The disadvantage of a hunter gatherer existence is that you must constantly move to avoid exhausting the resources in any one place. During these wanderings mankind ate a very wide variety of things both vegetable and animal. Whenever agriculture came about man could settle in one place grow his plants and keep his animals close by. We are designed to eat a wide variety of food and without a good variety we will become deficient in some of the vitamins and minerals our body needs. Once this was understood by modern scientists an industry has been created to pander to the diet conscious human, with all the supplements that are now available. Before you start swallowing handfuls of these pills, stop and think about your diet. If your diet is broad spectrum and contains the following :- Carbohydrates, Proteins, Fats, Vitamins, Vitamins Fibre and Minerals you don't need the supplements. Be careful of the fats there are two types unsaturated which are found in vegetable oils and saturated fat found in lard and animal fat you see in meat. You need to drink about two litres of water per day just doing nothing but you need a lot more than this if you are working or the weather is hot. It matters not whether you are a vegetarian or meat eater you must exercise to keep the weight off and to keep your strength up. Your body is the place you live and generally speaking it should last a lifetime, however if you abuse your body you will have to live with the consequences. The fat over bloated individual who watches too much TV will eventually die young and some of them wish they had died earlier rather than suffer the outcome of a bad lifestyle.. The trim, slim, fit, active, person will live much longer and they will wish they had died earlier as they will be bored witless because all of their friends are dead. No matter how bad you feel don't worry it can get a lot worse.

ROUGHING IT....... the easy way.
On a recent walk a dear kind lady took pity on me as she believed I had run out of food. I hope I thanked her enough for her kind thoughts. This is the mutual respect and comradeship that is beginning to build within the group, where we all look out for each others well-being. The lady need not have worried I had enough food for three good servings of my favourite food. I simply love Pâté and on this occasion I was carrying my favourite concoction of Pâté and creamed potatoes with added onion, salt and pepper with a good knob of butter melted into it. Marion is horrified. I make the spuds along the same lines as potato salad but without the salad cream. What, I hear you say .... "You eat cold potatoes" ! .... ? Yes I do, once you get your head round the fact that it's cold, it is also very tasty, and fills a gap in the old rumbling tum. It is a very fattening mix I know, but I enjoy it and will walk most of it off during the day. I make this up the night before and first put it into a freezer bag which then is placed in a small sandwich box and moulded to shape. I then place it in the fridge ready for the morning. I know this is not everyones idea of food but it works for me.

MEAT
Thus far we have dealt with the requirements of the vegetarian diet, ... but what about those of us who just love meat in our diets.? Unfortunately there is a limited range suitable for a short duration trek such as Ben Nevis. Pate is my favourite but it needs to be kept cool during the walk. It seems to oxidise very rapidly once the seal is broken on the package. Carrying a full pack with you means you will be carrying most of it back again. Think about Peperami this is small sausages of salami which contains pork. What about Beef Jerkey this is dried smoked strips of marinated beef. Then there is Nobby's Cuts this is another variant of beef jerkey. These products are available in most large supermarkets. Dried meat has been the staple food of humans up until the invention of refrigeration and should keep for years, however , when you open any of these modern products they must be eaten the same day. The advantage that they all have is that they are lightweight and whatever you don't eat can be brought home and disposed of. Try these products before you go on a trek as they are not to every one's taste. Like Marmite you either love it of hate it. Of course there is always the old stand by of beef or ham sandwiches, but can you get fresh supplies before we set off in the morning.? Tins of meat are too heavy and contain too much to eat at any one meal, and everything regardless of the weight must be taken off the mountain. The emergency Egg Banjo is good packing even if it does clog the arteries. .... Ah! what the heck, it tasted good.

When all is said and done the simple things are best tinned mackerel and sardines will supply you with the essential vitamins A & D. Both fish are very high in omega 3 which helps the heart and joints.
There is approximately 100 calories in each tin with some sugar and salt thrown in for good measure. These cans are lightweight and don't contain too much but when empty they can easily be flattened and placed in a re-sealable bag with your other rubbish for taking off the mountain.
A Banana and some whole grain bread and a few sweets (comfort food) go a long way to give your necessary daily intake.
It really sickens me when I see the amount of junk left behind by thoughtless hill walkers. Even a banana skin left on the hills will take time to decompose, tea bags last for years and crisp bags a lifetime. The teachers who bring these louts out should make them bring their rubbish home again. I am pleased to report that there are several members of the St Mary's group who pick up other peoples rubbish and bring it off the mountain. The mountains are as close to nature as we have got left anywhere to enjoy. It is our pastime and our children's future inheritance, we want to pass them on as good or better than when we found them.
